The Good, The Bad, & The Ugly

I'm not sure if know but we pulled out the wood pizza oven for this weekend. We were so excited about it and couldn't wait to launch pizzas on April 23rd. We were prepped, we had dough and toppings and our chef couldn't wait to fire it up!
Before I give you the behind the scenes story let me give you some back ground information. Our current staff consists of the owners, our general manager and our chef. We are all doing jobs that we are not used to doing, such a cooking! But, we have learned what needs to be done and how to do it well.
On Thursday evening, we learned very quickly that we didn't know enough about the pizza oven. Shortly after getting into the kitchen on Thursday afternoon, our chef received a call that there had been a death in his immediate family and we sent him to be with them. Our thoughts and prayers go out to his family during this difficult time.
After he left, we thought we would be fine, how hard is it to cook a pizza right? Well let me tell you, it's not a piece of cake. During the first order, the fist pizza stuck to the (mind my term here as I have no idea what it is called!!), handle thingy (LOL) and we had to toss it. Then the 2nd, 3rd and 4th fell apart in the fire oven and again they were thrown out. None of the pizzas we sent out looked like anything close to what we wanted and we found ourselves apologizing profusely to each of our customers; who were all very understanding.
So, we want to thank you all who ordered Pizzas on Thursday evening for your patience and understanding. We want to thank our Chef for coming back to work on Friday evening and putting out amazing looking pizzas. As for those of us who tried cooking them on Thursday, we realized that is a job that we need to leave for the professionals!
Thank you to everyone for all of your continued support. Our community is amazing and we wouldn't be able to do anyone of this without you! Again, we can't wait until we are able to open the doors and let you all in!
I wish I had taken some photos of what didn't go out the door last night but here are a few that were prepared and cooked by our chef that we were proud of!
